Chicken Asparagus Recipe #Paleo

This was such a easy affordable meal the whole family can eat!

1 large spaghetti squash
2 chicken breasts cut into small cubes;
about 2 cups of asparagus cut into pieces (I bought one bunch and baked part last night and served with Salmon and saved the rest of the bunch for tonight)
about 5 slices bacon
1 medium onion cut to liking
2 cloves garlic, minced
Sea salt and freshly ground black pepper to taste

Preheat your oven to 375 F.

Cut the spaghetti squash in two and, using a spoon, remove the seeds and stringy bits until the middle part is clean. Place in the oven, cut side down and on a aluminum foil covered baking sheet, 30 to 40 minutes or until the flesh of the squash is easily scraped off.

While the squash is cooking, cut up your bacon and cook to liking - reserve bacon grease

Remove bacon and saute onion and garlic in bacon grease

Meanwhile steam your asparagus for about 5 min in microwave

Remove your saute onion and garlic and add chicken cubes for 5 to 8 minutes, until just cooked through

Once the squash is ready, let it cool a few minutes just so it’s cool enough to handle and then use a fork to scrape out the flesh and set it aside.

Add everything together including the flesh from squash and cook until warm

Garnish with the remaining parsley to serve.

*NOTE - I pulled out a little of the mix before I added the squash in and made noodles for the kids added just a little butter and season salt and topped with the chicken & asparagus and a little bit of cheese....
