Bacon & Brussels Sprout Cauliflower Rice Recipe

Makes 4 Servings

8 Strips of Raw Bacon; diced
4 cups of riced cauliflower (pulse fresh cauliflower in a good processor or grate on cheese grater)
1/2 cup of diced yellow onions
1/2 cup chopped Brussels sprouts
1/2 cup diced white mushrooms
1 tsp sesame oil
1-2 tbsp soy sauce
1/2 cup of sliced green onions
salt & pepper to taste

Cook bacon in a cast iron skillet or wok until almost crisp, pour out some of the bacon grease.  Reserve 1 to 2 tbsp - add diced yellow onions, Brussels sprouts and mushrooms to pan.  Cook about 3 min.  Add cauliflower rice and cook another 2-3 min on med-high heat.  Add sesame oil and soy sauce and stir well.  Turn off heat and add green onions.  Salt and Pepper to taste.
