Collard Wraps with Almond Spread "Lunch Idea"

8 collard green leaves (next time I will use lettuce leaves of another type - felt like it was just to coarse)
1 lb of chicken or turkey
1/2 cup of sweet mini peppers
1/2 cup shredded red cabbage
1/2 cup grated beets
1/2 cup grated carrots
1/4 cup sliced green onions
1 cup almond spread (see below)

lay leaves out, add veggies and meat of choice, add almond spread and fold like a burrito

Almond Spread

1 cup of raw almonds
2 1/4 cups water
5 tbs light olive oil
1/4 cup fresh lemon juice
1 tsp of minced garlic
2 tbsp fresh chives
sea salt and pepper

place almonds in 2 cups of water in glass nonporous container and let them soak overnight.  drain and rinse.  use food processor with 1/4 cup remaining water and rest of the ingredients.  process until smooth.
