Tomato-Basil Quiche with Bacon & Spinach

This was pretty awesome!  Very easy and quick to make.

8 slices bacon
8 eggs
2 garlic cloves, minced
2 tbsp chopped fresh chives
1/4 cup chopped fresh basil leaves
1/2 tsp sea salt
1 tsp black pepper
2 cups of chopped spinach
1 to 2 tbsp of bacon fat (reserved from cooking bacon)
12 cherry tomatoes, halved

preheat over 375 degree

cook bacon, remove and drain on towel
mix eggs, garlic, chives, basil, salt and pepper, stir in spinach
grease a 9x11 baking dish with reserved bacon fat, pour the egg mixture into the pan. top with bacon pieces and cherry tomato halves
bake 30 to 35 minutesor until the quiche puffs up and becomes golden brown on edges
