Baked Coconut Salmon Recipe


Just another idea.

1 lb Salmon Fillet
1/4 tsp black pepper
2 tsp coconut or olive oil
1 lg shallot - diced
3 cloves of garlic, minced
zest and juice of one lemon
1/2 cup of coconut milk
2 tbsp fresh basil, chopped
pinch of sea salt

Served with Steamed Broccoli & Asparagus

Rub salmon with salt and pepper, place in baking dish
Saute oil, garlic, shallots - when tender add coconut milk, zest of lemon juice bring to low boil
add basil
Pour over salmon and bake uncovered on 350 for 10-20 minutes
