Here's a great snack or lunch idea! Yummy!
1/2 cup of Paleo Mayo (see my favorite below)
3/4 tsp Curry Powder
1 tsp Sea Salt
1 tsp Ground Pepper
1 Small Gala, Fugi or Honeycrisp Apple, peeled and cored / diced
Juice from 1/2 lime (over apples & mix)
1 lb of Chicken Breast (I used can)
Fresh Cilantro - chopped to liking
1/2 Red Onion - diced or chopped
1/4 cup toasted raw almonds
Mayo - I've fixed alot and finally nailed it....Here is what I do:
2/3 cup olive oil (if you use extra virgin you will taste it and not like - to strong)
1 egg
1 tsp lemon juice
1/2 tsp dijon mustard or dry mustard
1/2 tsp garlic powder
salt & pepper to taste
Use
Immersion Blender for the mayo - takes just a few seconds to make
