Gluten Free / Paleo Friendly Homemade Tortilla Shells

Put down the fat enriched tortilla shells and try these naturally fat burning Paleo - Gluten Free Tortillas...they were phenomenal and my family members enjoyed more!  I did fix an extra one to see if it would last a few days - so that I could prep ahead of time and save for other meals throughout the week and it did...pure freshness and no cracking when rolled.

2 Eggs whisked (cage free is best)
1 cup of full fat coconut milk or you could use almond milk (I did coconut milk)
1 tbsp of Olive Oil (recommend not using light b/c the taste is too strong)
3/4 cup of tapioca flour
3 tbsp of coconut flour
1/4 tsp sea salt

mix together dry ingredients in a bowl and wet ingredients in another bowl
pour wet ingredients into the dry and mix
season skillet with olive oil first use
pour batter in and make one at a time (I recommend using the size circle pan you wish to have size of shell, i used a flat square first and mine didn't turn out so round...so next time i will use my 10" circle pan)
this recipe yields about 6...when you pour - pour enough to coat pan...you don't want these thick

I paid around $8 - $10 for Tapioca Flour in store, but since I'll be cooking these alot I just grabbed off Amazon HERE 4 Pack - $19.20 for better price.
