Lemon - Coconut Muffins Paleo Friendly


These were just what I needed!  SOOOO Yummy.

1 1/4 cup almond flour
1 cup shredded unsweetened coconut
2 tbsp coconut flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/4 cup raw honey
1/3 cup fresh lemon juice, plus zest of lemon
1/4 cup full fat coconut milk
3 eggs
3 tbsp coconut oil
1 tsp vanilla extract

preheat over to 350F
in small bowl mix all the wet ingredients together
in medium bowl, mix dry ingredients
pour wet into dry ingredients
let batter set for a few minutes, then stir again
grease muffin pan or use liners (paper no recommended) and fill each well or cup about 3/4 full
bake 18 to 23 minutes

Should yield a dozen
