Prepping veggies can take along time, so I try to find other things to make to reduce time! I had veggies I prepped one night and meat from another night - so Omelets it is!
Saute your veggies & meat in a skillet in Coconut Oil, Olive Oil or Ghee
Then mix up (2 to 3) Cage Free Eggs (use a non stick skillet found HERE, I add a little bit of Ghee).
Cook on Low/Med heat, run a flat spatula around the sides and lift bottom a little to let uncooked egg run under
Once egg is about done, add your veggies & meat then fold the egg
You can of course add any type of stuff you want. I use to do feta cheese or shredded cheese but have opted out of using at this point. I only added a little Franks Hot Sauce on top!
