Now these are pretty darn neat! Can be made ahead for the busy mornings, however it took little prep - just oven time!
Ingredients:
1 tbsp of coconut oil, butter or ghee (I used coconut oil this round)
1 1/2 cups peeled and chopped green apple (about 1 1/2 apples..next time I will just use two full apples)
1 1/2 tsp cinnamon, divided
3 tbsp of warm water
6 eggs (cage free is the best)
2 tbsp full-fat coconut milk
1/2 tsp pure vanilla extract
1/4 tsp apple cider vinegar (crazy, I'm out - so eliminated this)
1 tbsp coconut flour (yes ONLY 1 tbsp - that threw me off)
1/4 tsp baking soda
pinch of sea salt
Preparation:
-melt oil or butter and saute apples, tsp cinnamon and water until apples are consistency of chunky applesauce or apple filling - let cool
-preheat over 350
-mixing bowl whisk eggs, coconut milk, vanilla and vinegar. Sift in coconut flour, remaining 1/2 tsp cinnamon, baking soda and salt. Whisk. Stir in cooled apples, reserving 1/4 cup for topping.
Spoon mixture into parchment paper cupcake liners. Makes 6. Top with remaining apples.
Bake 40 minutes or until the muffins rise and become golden brown.
