Beet & Orange Arugula Salad #Paleo

Although I was the only one in the family that ate this salad, I loved it....my family doesn't believe in putting fruit in a salad.

• 4 beets, roasted, peeled and cut into thin slices or wedges or use can (read the label and make sure to sugar etc was added)
• 4 cups arugula
• 2 oranges, peeled and cut into segments
• 2 tbsp fresh cilantro, chopped
• 1/3 cup pecans pieces

Dressing:
• ¼ cup extra-virgin olive oil
• 1/2 fresh orange - squeezed
• 1 tbsp red wine vinegar

1. In a small bowl whisk together ingredients for the dressing, taste and add more fresh orange juice if desired.
2. Toss arugula with dressing
3. Arrange the beets, orange segments on top of the arugula.
4. Sprinkle with cilantro and pecans and serve.
