• 8 chicken thighs, bone-in & skin
on
• ½ cup Dijon or homemade mustard
• 3 tbsp apple cider vinegar
• 3 tbsp extra-virgin olive oil
• 4 garlic cloves, minced
• 2 tbsp tarragon, roughly chopped
• Sea salt & freshly ground black pepper
1. Preheat oven to 400 F.
2. In a small bowl combine mustard, vinegar, 2 tbsp olive oil, 2 garlic cloves, tarragon, and salt and pepper to taste.
3. Place the chicken thighs in a roasting pan and pour mustard and tarragon mixture over
chicken. Toss to coat well.
4. Roast the chicken for 45 min or until reach 165 F and juice run clear.
