Delicious!!!
3 (6 ounce) cans wild albacore tuna
2 jalapeno peppers, minced (remove ribs and seeds for less heat)
3 celery stalks, diced
1/2 cup diced red onion
Homemade Mayo (see below)
3 tbsp dried dill
1 1/2 tsp granulated garlic
seas salt and black pepper to taste
2 avocados, halved
lemon wedges for garnish
Drain the water or oil from the cans of tuna. Put the tuna in medium bowl along with jalapenos, celery, and onions and mix.
Small bowl combine the mayo, dill, granulated garlic, salt and pepper. Add the may mixture to the tuna mixture and stir to combine.
Serve with avocado halves with lemon wedges for garnish.
MAYO:
2/3 cup olive oil (if you use extra virgin you will taste it and not like - to strong)
1 egg
1 tsp lemon juice
1/2 tsp dijon mustard or dry mustard
1/2 tsp garlic powder
salt & pepper to taste
