These were amazing! The Slaw & Tortilla Shells can be made ahead of time! I'd hold off on the sauce b/c anything with avocados - browns - still taste the same, but the look is hard for me to get past.
Fish:
Coat fish with favorite seasoning (I have a fish seasoning)
grill or skillet until done
Slaw Mix:
Pre packaged cole slaw mix (I picked mine up at Whole Foods really cheap)
1/4 cup fresh chopped cilantro (leaves only)
juice of 1 lime
salt and pepper to taste
Avocado Cilantro Sauce:
1 avocado, pitted
squeezed lime juice
1/4 cup fresh cilantro, chopped (leaves only)
1/2 jalapeno pepper, seeded
2 tbsp olive oil
1 tsp chipotle powder
1/2 tsp cumin
1/2 tsp garlic powder
salt & pepper to taste
put in processor and add a little water to thin to your liking (I kept mine like guacamole)
Favorite Paleo Tortillas:
In one bowl combine -
2 eggs whisked
1 cup of full fat coconut milk
1 tbsp olive oil
Another bowl combine -
3/4 tapioca flour
3 tbsp of coconut flour
1/4 tsp salt
Mix wet ingredients with dry. Cook in a small skillet or if you want larger shells - larger skillet. Make these really thin, just coat the bottom.
